1 pkg. Spicy Italian Sausage, sliced 1 in. pieces 2 oz. Diced Pancetta 1 c. Frozen Melange a Trois Peppers, thawed 1 jar Vodka Sauce 1 pkg. Polenta (chub), sliced in 1 in. rounds Place pancetta in cold skillet and heat on medium until it begins to brown. Add sausage and peppers and cook until sausage is golden. Stir in sauce and reduce heat to medium low. Let simmer for 5-7 minutes. In skillet heat oil over medium heat until hot. Add slices of polenta. (don’t overcrowd pan)Season with salt and fresh black pepper. Cook on both sides until golden brown. Drain on paper towels. Repeat until all polenta rounds are cooked. Serve sauce over polenta rounds.
