Paella usually takes 4+ hours to make, but this filling, low-fat recipe is ready in 10 minutes! Uses all Trader Joe’s ingredients. Ingredients: 1 boneless skinless chicken breast, chopped into bitesize pieces 2 links Spicy Italian Chicken Sausage, chopped into bitesize pieces 1/2 bag, Trader Joes frozen Seafood Blend (or, if preferred, frozen shrimp) 1/2 bag, Trader Joes frozen peas (can substitute TJ’s Soycutash) 1 bag, Chimichurri Rice Bottle of Two Buck Chuck white wine 1 package Trader Joes precut sweet potatoes (available in refrigerator section) Directions: Add just enough olive or vegetable oil to coat the bottom of your wok or large skillet. Saute the first three ingredients under medium-high heat, stirring often. Snip the corner off of the package of sweet potatoes and microwave as directed (5-7 minutes). When the chicken breast has begun to brown and the seafood is partially defrosted (<5 minutes), add the Chimichurri rice and frozen peas. Open the wine and add a splash (about a half a wineglass) to the paella. Drink the rest. Continue to saute the rice and other ingredients until heated through (<5 minutes). Add the sweet potatoes. Serve with crusty bread and a green salad. Yum!
