Thick & Savory Italian Soup

Great weeknight meal that’s ready in under an hour. Ingredients: 2 T Trader Joe’s Extra Virgin California Estate Olive Oil 1 – 12 oz pkg Trader Joe’s Spicy Italian Chicken Sausage, casing removed and crumbled 1 small Trader Joe’s Hawaiian Sweet onion, minced 4 cloves garlic, minced 1/2 C Trader Joe’s Shredded Carrots, minced 1 small zucchini, chopped 4 C water 1 C Trader Joe’s Charles Shaw Merlot 5 pouches Trader Joe’s Savory Beef Broth Concentrate 1 – 28 oz can Trader Joe’s Whole, Peeled Plum Tomatoes with Basil (undrained and chopped) 1 – 6 oz can Trader Joe’s Organic Tomato Paste 1/4 C packed fresh basil leaves, chopped 1 T fresh oregano, chopped 1 T sugar 2 C Trader Giotto’s Cheese Tortellini (in the fresh food section – do not use dry) ½ pkg (.75 oz ) Trader Joe’s Organic Fresh Italian Parsley, chopped Directions: Heat olive oil in a large pot over medium heat. Add sausage, onion, garlic, carrots and zucchini. Saute over medium heat for 15 minutes. Do not drain. Add water, merlot, beef broth concentrate, canned tomatoes, tomato paste, basil, oregano and sugar. Turn heat to high and bring to a rolling boil. Add tortellini, cover, reduce heat to low and simmer for 10 minutes. Remove from heat. Add chopped parsley, cover and let rest for 10 minutes. Excellent served with Charles Shaw Merlot and TJ’s Kalamata Olive Ciabatta Artisan Bread.
