Sausage Foil Dinner

This was inspired by a family camping recipe and uses only Trader Joe’ products. There are only three ingredients, all from Trader Joe’s. The best part of this recipe is that each person can prepare their own meal to their own liking. Chicken Italian Sausage Vegetable Grill Mix Spray Olive Oil Each person will need two pieces of 12″ aluminum foil. Each person should lay one piece of foil out on their plate. Spray the foil lightly with olive oil. Lay desired vegis from the vegi grill mix available in the fresh vegetable section on the foil. The grill mix comes with summer squash, eggplant, butternut squash, onion and bell pepper. Lay a piece or two (this recipe is geared toward all appetites!) on top of the vegis. Give the bundle another quick spray with olive oil and a sprinkle of salt and pepper. The 12″ aluminum foil can now be folded up into a square. Be sure to seal the seams tightly. Wrap the second piece of aluminum foil around the first in the opposite direction. The seams of the foil should be on opposite sides of the package. Nestle these foil packages in the coals of your campfire for approximately 30 minutes. When you pull out your aluminum foil package (with tongs!) your own, individually prepared, foil meal is ready to eat right from the wrapping. It is okay, but not necessary, to add one of Trader Joe’s condiments to the mix at this point. One of the fresh salsas would be a delicious accouterments.
