Ingredients: 2 cups drained chick peas 1 medium sweet onion- diced 2 cloves fresh garlic- minced 1 green pepper- diced 1 medium to large cucumber- peeled, seeded, and chopped 1 can drained whole black olives 1/3 cup chopped cilantro 1 jalapeno pepper- chopped (optional) 1/2 cup crumbled feta cheese In a separate bowl, mix the following ingredients for the Dressing: 1/2 cup olive oil 1/4 cup balsamic vinegar juice of 1 or 2 lemons or limes 1/2 cup fresh basil- chopped 1/4 cup fresh tarragon- chopped 1/4 teaspoon garlic powder salt and pepper to taste Stir dressing igredients until well incorporated. Pour over salad and toss to coat. Serve cold with a dollop of Fage Greek Yogurt and garnish with cilantro.
