Chicken Salsa Bowl with Papaya Mango Salsa

1 pouch frozen Trader Joe’s Organic Brown or Jasmine Rice, or 2 cups cooked rice 1 (15 ounce) can black beans, rinsed and drained 1 cup Trader Joe’s fresh salsa 1/2 teaspoon cumin, optional 8 ounces Trader Joe’s Just Chicken, cut into small pieces Lettuce, chopped Tomato, chopped 1/2 cup fresh Trader Joe’s Papaya-Mango Salsa Lime wedges, optional 1. Heat rice according to package directions. 2. Comibe beans, salsa and cumin, heat in microwave for 2 minutes, or in saucepan for 7 minutes. 3. Warm Just Chicken in microwave for 2 minutes, or in saucepan for 5-7 minutes. 4. Place bean and salsa mixture over rice. 5. Place chicken on top of bean and salsa mixture. 6. Add chopped lettuce and tomatoes; top with Papaya Mango Salsa and squeeze lime over the top, if desired. Serve with warmed corn tortillas or baked tortilla chips and salsa. Serves 4.
