Orange Cranberry Corn Muffins

1 package Trader Joe’s cornbread mix 1 can mandarin oranges in light syrup 1/2 c. orange flavored dried cranberries 1 tsp. grated orange zest Drain mandarin oranges in a colander over a medium bowl. Reserve syrup. Add cranberries to syrup and microwave for 1 minute to plump cranberries. Let sit. Using fingers, pull mandarin oranges into chunks in the colander. Drain cranberries and place into colander with orange chunks. Prepare cornbread mix according to package directions. Sprinkle orange chunks, cranberries and orange zest to mix. Fill greased muffin tins 2/3rds of the way up. Bake according to package directions. Baked muffins freeze well and are even more delicious the next day after the zest has time to completely permeate the muffins.
