Shrimp Stuffed Peppers with Lemon Dill Sauce

A delicious and easy main dish when you add shrimp, or chunks of cooked fish or chicken. Without the added protein, it also makes a great side-dish. The peppers, shrimp and Lemon-Dill sauce all came from Trader Joe’s. 6 large bright-colored peppers 2 Cups brown rice — cooked 1 pkg. Froz. Cooked Medium Shrimp (50-70 per pkg.) 3 T. Olive Oil 1 Medium Onion — chopped 1 bottle Trader Joe’s Lemon-Dill Sauce Wash, then cut peppers in half with stems on to form cups. Cut out the inside membrances, etc. without piercing the peppers. Steam peppers until tender, but not soft. Place peppers in a shallow serving dish, and stuff each half with brown rice. Meanwhile, cook onion in olive oil. When transparent, add the cooked shrimp and saute until the water has been reduced to about 1 cup. Add the entire bottle of T.J.’s Lemon-Dill Sauce, stir & cook for about 7 minutes more. Pour the shrimp sauce over the stuffed peppers, and serve.
