These eggie, vegetable filled muffins will be the best part of your morning. These fill you up and get you going to face the day! 1 cup Trader Joe’s Buttermilk Pancake and Baking Mix 4 eggs 1/2 Cup finely chopped mushrooms 1/3 Cup shredded zuccini 2 green onions finely chopped 1/4 cup Trader Joe’s Parmesan cheese 1/4 Cup Water 1/4 cup sharp cheddar shredded – sprinkle on top of muffins Whisk eggs 4 minutes until light and frothy. Incorporate all ingredients. Batter will be slightly lumpy. Sprinkle sharp cheddar on top of each muffin in pan. Bake 350 degrees in mini muffin pans for 12 minutes – longer for regular or large muffin tins. Muffins are done when slightly golden and puffed on top. THESE MUFFINS ARE YUMMY!!!!
