I got this from my sister, who also shops at Trader Joe’s for everything. Just take the Cornbread Mix, put some in a bowl and add water to the consistency that works for you. My sister likes her pancakes thicker than I do. I like my pancakes a little thinner. Stir the mix until the mix is smooth. There will be lumps from the corn. I let it sit for a bit so that the corn gets plumper. Heat griddle to 350. Add butter or I use Earth Balance, and let it melt. Pour your pancake mix onto the griddle. When the pancake edges turn a little brown, flip them over. It doesn’t take long. We use Trader Joe’s real maple syrup and serve with Morning Star veggie sausages. YUM!
