Trader Joe’s quinoa (cook according to pkg) Trader Joe’s light feta cheese 1 cup fresh chopped spinach 1/2 cup toasted pine nuts 1 whole lemon 1 cup tj’s refrigerated roasted tomatoes Toss together cooked quinoa,crumbled feta cheese,pine nuts,spinach and tomatoes in a medium bowl. Squeeze fresh lemon juice over the ingredients.Mix together and refrigerate until ready to serve.
