Havana Chicken

This recipe is from Trader Joe’s: 2 fully cooked chicken breasts (1 package) 1 jar Cuban mojito simmer sauce 1 can Cuban style black beans, drained & rinsed 1 jar fire roasted peppers, drained 1 package roasted plantain chips Directions: – Cut chicken into bite size pieces. – Chop roasted peppers. – Lightly crush plantain chips into small pieces. (I use very little of these, no where near a package.) – Place sauce and beans into a microwavable container, cover and heat until sauce is warm, 1 – 2 minutes. – Add chicken and roasted peppers. Cover and heat 1 – 2 minutes until hot throughout and stir well. – Serve garnished with crushed plantains. I like to make this in the morning before work, refrigerate, and then heat it up in the micro for dinner. It’s a family fave. Also, nice on rice.
