1 17.5 ounce box Trader Joe’s Pumpkin Bread and Muffin Mix 2 large eggs 1/2 cup vegetable oil 1 cup water 1 cup Trader Joe’s chopped toasted pecan pieces 4 egg whites, beaten to stiff peaks Heat waffle iron to manufacturer’s specifications. Mix together first five ingredients, fold in egg whites. Bake on waffle iron – they may brown a bit quicker than your ordinary waffles, so check on them early. Top with Trader Joe’s maple syrup and more chopped toated pecan pieces. Makes a great dessert when warm waffles are topped with egg nog (or your favorite flavor) ice cream, drizzled with caramel ice cream topping and sprinkled with chopped pecans. Makes 9 7.5″ round waffles.
