1 17.5 ounce Trader Joe’s Pumpkin Bread & Muffin Mix 1/2 cup vegetable oil 4 eggs, divided 3/4 cup corn syrup 3/4 cup sugar 1/4 cup melted butter 1 teaspoon vanilla 1/2 teaspoon salt 2 cups pecans Preheat oven to 350 degrees. Spray 9″ x 13″ pan with non-stick cooking spray. Mix together first two ingredients and one of the eggs. Press into the bottom of 9″ x 13″ pan. Bake 15 minutes. Mix together remaining eggs and next 5 ingredients, stir in the pecans and pour on baked crust. Bake an additional 25-30 minutes, or until set. Cool and cut into bars. Makes about 24 bars.
