2 lbs. lean ground turkey 1 large yellow onion, diced 1 green bell pepper, diced 1 15-oz. can pinto beans 1 28-oz can diced tomatoes 2 cups tomato juice 1/4 cup chopped fresh cilantro 1/2 cup Trader Joe’s organic canned pumpkin 2 teaspoons Trader Joe’s Pumpkin Pie Spice 1 teaspoon cayenne pepper (or to taste) Additional chopped cilantro to garnish In a large saucepan, cook ground turkey over medium until done. Stir in onion and pepper and cook until vegetables are soft. Stir in beans, tomatoes, tomato juice, cilantro, pumpkin, spice, and cayenne pepper. Cook over medium-low heat until mixture is slightly thickened, about one hour. Garnish with additional chopped cilantro to taste.
