A quick mix requiring only eggs, butter and water. The ingredient list is reassuring: nothing too weird or chemical. The mix goes together quickly and the green tea flavor is nice. Serving this alone won’t get you any praise. It’s nice, but a little boring. The tea flavor could be a bit stronger, but has been pared down, probably, due to the unfamiliar (to our American palates) and slightly bitter taste of green tea. Something sharp and acidic such as apricot or raspberry jam or fresh fruit pair nicely with the cake. Sliced almonds sprinkled on top before baking would add a bit of texture and flavor.
