This rich, elegant yet easy dessert is like pumpkin cream pie in a glass. Instead of a high fat crust, the pumpkin cream pudding is layered with crunchy Pecan Praline Granola for a delicious Thanksgiving treat. 1 can Trader Joe’s Organic Canned Pumpkin 1 3.4 ounce package vanilla flavored instant pudding and pie filling 2/3 cup milk 1 1/4 teaspoon Trader Joe’s Pumpkin Pie Spice 1 cup heavy whipping cream 1 package Pecan Praline Granola (from Trader Joe’s) In a large mixing bowl, beat together first 4 ingredients until smooth and creamy. In a separate bowl, beat whipping cream until stiff peaks form. Fold whipped cream into pumpkin mixture until incorporated. Alternate layers of granola with pumpkin mix in 6 parfait glasses as follows: place 2 tablespoons granola in bottom of glass, put in 1/2 cup pumpkin mix, then put 2 tablespoons granola, another 1/2 cup pumpkin mix, and top with 2 tablespoons granola.
