Vegan Cream of Pumpkin Soup

This soup is a snap! All ingredients are available at TJ’s. Ingredients: 1 onion 1 tbsp. olive oil 1-2 seedless chipotle peppers (depending on spice preference) 2 c. vegetable broth 1 c. coconut milk 1 c. soy milk 1/4 c. maple syrup 1/2 tsp. Trader Joe’s Pumpkin Pie Spice 1 15 oz. can Trader Joe’s Pumpkin 1 tsp. salt optional garnish- 12 Trader Joe’s Cinnamon Glazed Pecans, chopped. Directions: In a large soup pot, brown the chopped onion, chopped and de-seeded chipotle pepper(s), with the olive oil. While this is cooking, combine the remaining ingredients (wet and spices) in a blender. Blend 1-2 minutes until well combined. When onion is browned, pour pumpkin mixture into soup pot with cooked onion mixture, stir. Simmer over medium heat for 45 minutes. Serve with optional garnish of sprinkle of cinnamon glazed pecans.
