these muffins fill the kitchen with the aromas of autumn – enjoy them warm with a cup of your favorite TJ’s brew 2 cups All Bran or other fiber cereal 1 cup skim milk 3/4 cup Trader Joe’s organic canned pumpkin 2 teaspoons Trader Joe’s pumpkin pie spice 1 egg, lightly beaten 1/2 cup brown sugar 1 1/4 cup flour 1 Tablespoon baking powder 1 teaspoon salt 1 apple, cored and diced 1/4 C Trader Joe’s dried cranberries, chopped Preheat oven to 350. Mix cereal & milk; let rest 5 minutes. Add pumpkin, egg & brown sugar. Stir to combine. Sift flour, pumpkin pie spice, salt and baking powder. Add to pumpkin mixture. Fold in apple & dried cranberries. Divide dough among twelve paper-lined muffin tins (hint: use an ice cream scoop). Bake at 350 for 20-25 minutes or until toothpick comes out clean. Store muffins in the refrigerator (muffins also freeze well)
