Pumpkin Chocolate Chip Cookies

2 sticks butter, softened 3 cups brown sugar, packed firmly 2 cups Trader Joe’s organic pumpkin 2 eggs 3-4 tablespoons grated orange zest 2 teaspoons vanilla 3 cups white flour 2 cups wheat flour 3/4 cup wheat germ 4 teaspoons baking powder 2 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon EACH allspice, grated nutmeg, and ground ginger 1 teaspoon salt 1 bag Trader Joe’s semisweet chocolate chips Preheat oven to 400 degrees F. Beat butter and brown sugar in large bowl on medium speed until creamy. Beat in pumpkin, eggs, orange zest, and vanilla. Mix together dry ingredients. Add to pumpkin mixture gradually, and beat until well blended. Stir in chocolate chips. Drop by heaping teaspoonfuls two inches apart onto ungreased cookie sheets. Bake 8 to 10 minutes or until lightly browned around edges. Let cool on cookie sheets for a few minutes, and then remove to a rack and let cool completely. Makes about 120 delectable cookies. These cookies freeze wonderfully and (unlike most cookies, in my experience)almost taste better after being frozen, Enjoy!
