1 bottle yellow curry sauce 1 can light coconut milk 2 bags peas 1 pkg firm tofu Set peas on counter to defrost briefly, while gently heating the coconut milk and curry sauce together. Drain firm tofu well, and cut into bite-sized cubes. Add peas to curry mixture and continue to heat. Add tofu and continue to heat approximately 15 – 30 min. Serve as a main dish with salad, or as a side dish. This freezes well in individual servings for quick meals.
