Chili Lime Peanut Crusted Mahi Mahi

I got this recipe from the Galley at the Trader Joe’s in Northville, MI. 1 pk. Mahi Mahi (thawed) 3 Tablespoon butter, melted 3/4 coarsly ground chili lime peanuts 4 tablespoons coconut milk 1 tablespoon chopped cilantro Preheat Oven to 425. In a small bowl, melt butter, add cilantro and nuts and set aside. Place foil on a baking sheet, oil. Place Mahi Mahi on foil and season with salt and pepper. Bake for 5 minutes. Remove and brush with coconut milk. Divide nut mixute among the tops of fillets. Return to oven and bake 5-7 minutes until golden brown.
