Florentine Frittata

Serves 4 6-8 eggs, depending on size 1-16 oz bag frozen chopped spinach 2 roma or plum tomatoes, sliced ½ cup shredded cheese, any flavor In an ovenproof skillet, melt some butter and add spinach, sauté for 3-5 minutes. Beat eggs and add pour slowly onto spinach. Cook on medium for 10-12 minutes. Sprinkle cheese on top and then lay slices of tomato on top of cheese. Cook under broiler until top is melted. Slice and serve hot!
