1 package Trader Joe’s whole wheat pizza dough 1 box Trader Joe’s Eggplant Cutlets 1 jar Trader Giotto’s Tomato Basil Marina Sauce Sliced tomatoes Trader Joe’s mozzarella cheese Roll out whole wheat pizza dough, place in 9 x 13 baking pan spryed with PAM. Bake dough as instructed on package. Bake Eggplant cutlets, turning once On baked pizza dough, lightly drizzle olive oil, spread Marina sauce place Eggplant Cutlets Top with sliced tomatoes Sprinkle with Mozzarella cheese. Bake at 350 degrees until cheese is melted or place under broiler until cheese is melted. I have prepared all ingredients in the morning and put the pizza together later in the day or made it all at once. You can either serve it a an appetizer, smaller pieces, or as dinner with a tossed salad. Try it, you will like it.
