Soy Chorizo Chili

1 small onion, chopped 2 Tbsp. olive oil 1/2 package of TJ’s Soy Chorizo, removed from plastic casing and crumbled 2 20-oz cans TJ’s canned red kidney beans, rinsed and drained 1 can TJ’s Tuscan Marinara Sautee the onion in the olive oil until soft, but not brown. Add the chorizo and stir for 2-3 minutes. Add the beans and the marinara and simmer for 15-20 minutes, stirring occasionally. Serve with sour cream or Greek yogurt and shredded Mexican Blend Cheese if desired.
