Sausage Egg Burritos

‘-2 links Spicy Italian Chicken Sausages -3 eggs, slightly beaten -2 large tortillas -1 cup sliced mushrooms -1 Tbsp butter -1 cup shredded Cheddar cheese -1 cup salsa -1/2 cup sour cream -Salt and pepper to taste 1. Cook sausages in a skillet on medium-high for 8 minutes until golden brown. Then remove them from the skillet and cut into 1/2-inch slices. 2. Saute mushrooms in the same skillet with butter for 5 minutes until soft. Then add sausage pieces and eggs. 3. Let eggs set slightly and then scramble them with the other ingredients, adding salt and pepper. 4. Take the skillet off the heat and add cheese. 5. Warm tortillas in the microwave for 20 seconds and add half the mixture to each tortilla. Then top them with salsa and sour cream before wrapping them up like a burrito.
