Tuscan Pasta Salad 1 1/2 lb. gemelli or rotini pasta 1 jar (Trader Joe’s) julienned sun-dried tomatoes in olive oil, drained and oil reserved 2 cans (15 oz) plain artichoke hearts (not marinated),drained and quartered 1 jar (Trader Joe’s) roasted red and yellow bell peppers, drained and chopped 1 jar (Trader Joe’s) pitted Kalamata olives, drained and halved 1 1/2 logs fresh marinated mozzarella cheese (Trader Joe’s), diced (or crumbled feta cheese) Fresh basil, a good handful, chopped Balsamic vinegar Salt and pepper Dried oregano Cook pasta as directed, and cool. Add all remaining ingredients except balsamic vinegar, salt, pepper, and oregano. Stir until well combined. Add the reserved oil from the sun-dried tomatoes. Add a splash of balsamic vinegar, some salt and pepper, and a touch of dried oregano to taste. Chill.
