Summer Inspired Pan Seared Sea Scallops Served Over Arugula Salad With Lime Vinaigrette

What You Need: 1 bag of Trader Joes Wild Arugula 1 small shallots, thinly sliced 1 cucumber, diced 2 small tomatoes, diced 2 whole limes juiced Olive oil 10 large fresh scallops Sea salt to taste Pepper to taste What to Do: STEP 1) Place the arugula in a medium bowl then add the first three items. In another small bowl make the vinaigrette by adding lime juice and whisking it together with olive oil, add salt and pepper. STEP2) Heat about 1-2 tablespoons of olive oil in a non-stick pan, and add the scallops. Cook on medium heat. Scallops should be cooked on one side until nicely browned, then turned over and cooked on the other side. STEP 3) Placed cooked scallops on mixed salad and drizzle lime vinaigrette over the top. Sprinkle with salt STEP 4) Enjoy!
