Red Pepper Spread with Eggplant and Garlic Stuffed Mushrooms

This is a quick healthy lowfat snack but I think it’s tasty enough to serve guests. 12 whole white button or Baby Bella mushrooms 3T (or more if you like) TJ’s Red Pepper Spread w/ Eggplant and Garlic. 2-3T Vegetable or Chicken Broth Crumbled Cheese of your choice. Remove stems from mushrooms trimming the woody ends and chopping the remaining stems into small pieces mix stems with the Red Pepper Spread. Place mushroom caps into small baking dish stuff with Red Pepper mixture. Top mushrooms with as much or as little cheese you prefer. I go light on the cheese to keep the calorie count low. I have used TJ’s light Feta or a sprinkle of Parmesean. Low fat mozzerella would be nice too. Pour the broth in the bottom of the baking dish ( a splash of white wine is also an option). Cover dish with plastic wrap making sure it’s tightly wrapped. Microwave for 4-5 min. Delish!
