Cream of Harvest Soup

1/2 stick Trader Joes Salted Butter 1 onion, diced 1 pkg Trader Joes Harvest Medley (16 oz) 3T flour 1 box Trader Joes Chicken Broth (32 oz) 1 bottle Trader Joes Heavy Cream (16 oz) salt & pepper, to taste 1) Chop the Harvest Medley in a food processor and set aside. 2) Melt butter in a large heavy saucepan. Add onion & cook over moderate heat until onion is translucent. Add chopped Harvest Medley & cook 5 minutes, stirring occasionally. 3) Blend in flour until vegetables are well coated. Add broth slowly while stirring constantly. Bring to a boil, reduce heat & simmer for 5 minutes. 4) Remove from heat and stir in the cream.
