Antipasto Stuffed Pitas

Ingredients: -1 large Pita, cut in 1/2 -4 slices Prosciutto -4 slices Provolone cheese -4 Tbsp Roasted Red Pepper & Eggplant Spread -Olive oil for drizzling Prep: 1. Preheat a grill pan or large nonstick griddle over medium to medium high heat. 2. Spread 2 Tbsp of spread inside each Pita half and stuff with 2 slices of Prosciutto and 2 slices cheese. 3. Drizzle 1 side of Pitas with olive oil and place coated side face down on the grill. 4. Drizzle opposite side with additional olive oil. 5. Grill 2 or 3 minutes on each side and serve immediately.
