Peppermint Truffles

1 box Peppermint Joe Joe’s, finely crushed 8 oz. block Cream Cheese, softened 1 lb block Ghiradelli White Chocolate 1 bag Roasted/Not Salted Pistachio Nuts & Pieces, finely chopped 1. Combine joe joe’s and cream cheese in a bowl. Roll mixture into walnut sized balls and place on a parchment lined cookie sheet. Refrigerate for 1 1/2 hours. 2. Place pistachios on a plate and reserve. Melt chocolate over a double broiler until melted. Dip each ball into chocolate and roll evenly in nuts. Place back on parchment to set chocolate. Enjoy 🙂
