Mexican Quinoa

Read Quinoa instructions on package. Use a can of “Mexican” chopped tomatoes with chiles instead of water. If making one cup of quinoa, add 14 oz can of “Mexican” tomatoes plus 6 ounces of water. Bring to boil as described on quinoa package and simmer for 15 minutes. When quinoa is cooked, add one disk of Trader Joe goat cheese (about 1 ounce)and 1 ouce of Trader Joe Asiago/Romano/Parmesan cheese and reheat(with a few ounces of water if moisture is necessary). Once rewarmed with cheeses and liquid, ready to eat.
