Trade Joe’s (or any no antibiotic hormones preferably) sweet italian chicken apple sausages Trader Joe’s lentils (already cooked, in salad section usually) eggs (only one needed per serving) smashed organic sweet potatoes with cumin, sea salt, pepper, real butter(salted), garlic powder (see below) toasted Trader Joe’s sprouted whole grain wheat bread yogurt sauce made of Trader Joe’s greek style plain whole yogurt, any hot chili sauce and garlic powder Trader Joe’s iberico cheese. cook the smashed potatoes in a large batch ahead of time TRUST me you’ll use them for all sorts of things. Just cut in chunks for quick cooking (peel if desired, but I like the vitamins in the skins), about 2 inch chunks, boil about 10-12 min until fork sticks in chunks easily, turn off, drain, put back in pot (unless your pot is nonstick, use a bowl instead in that case), usually a flat bottom bowl or large corningware container works best), use a smasher with the butter, sea salt, pepper, cumin and garlic powder,to taste, just should take about 10 strokes, don’t overmix can become gummy. Nice and chunky is best, set aside or seal and put in refrigerator until ready to use, I do this regularly and use this for various dishes throughout the week, sweet potatoes are very good for your heart! 1-put toast in toaster (toaster oven is ideal), just LEAVE it in there after it “dings” to get nice and dried out which will absorb everything and still stay a bit crunchy, yum! 2- fry up sausages in slices, bias cut is best for most cooking surface. 3-add lentils (trader joes already cooked) just to warm, add some cumin, pepper, garlic powder, a PINCH of salt only, sausages will add some salt of their own microwave about 1 cup of the smashed sweet potatoes 4-put in separate bowl for a few min, use SAME pan just add some real butter and fry up 1 egg for each serving, if more than 2, fry an egg, assemble, drop another egg, assemble, and so forth. 5-while egg is frying (watch it though BEST TO UNDERCOOK SINCE YOU’LL NOOK IT ONCE MORE AT END!) butter toast, put on each plate (a shallow soup bowl is BEST over a flat plate) 6-smash 1/2 cup of smashed sweet potato mixture on top 7-add some of the sausage/lentil mixture 8-add the egg 9-add cheese (optional, added Iberico cheese from trader joe’s this time) 10-microwave about 30 seconds Serve!
