Lentil Arugula Tahini Salad

INGREDIENTS -1 package lentils (in fridge section) -1 package white sliced mushrooms -1 bag organic arugula -1/2 bag diced white onion OR 2 diced shallots -Chopped (baking) walnuts (or hand crush whole/raw) DRESSING INGREDIENTS -Tahini (1/2 container – found in fridge near hummus) -1 lemon -garlic (one clove, crushed or diced) -Agave nectar (a couple squirts or 1 tablespoon) -olive oil (1/4 cup) -salt, pepper – season as desired DIRECTIONS -In bottom of large bowl, whisk all salad ‘DRESSING’ ingredients. -Hand crumble entire package of Lentils into bowl -Add arugula, onion/shallot -Toss all ingredients Serve in salad bowls, top each salad with walnuts This is an excellent park/picnic/potluck salad as it is hearty, vegan and travels well. Arugula only becomes tastier when ‘marinated’ in dressing and slightly wilted. Serves: 4-6 (double up lentils and arugula for twice the amt).
