Tuscan Portobello Melt

Ok everyone this is an amazing Panini! Easy and delicious! What you will need: Tomato and Onions: 2 cups red onions, sliced with center 2 cups mini pearl tomatoes 2 tablespoons vegetable oil 1 tablespoon salt & pepper 1 tablespoon sugar 4 tablespoons balsamic vinegar Mushrooms: 2 Large Portobello Mushrooms 1 tablespoon salt & pepper Sandwich: Par-baked Ciabatta loaf or Panini Rolls 1 Package Swiss Cheese 1 bottle Tuscan Italian Dressing Olive Oil Optional: Red Pepper Tomato Soup on the side ( i really suggest trying them together) To Make Tomato and Onions: (do this first) On a cutting board, cut the onion crosswise in half. Cut the mini pearl tomatoes in half lengthwise. Heat oil in a sauté pan; add the onions and sauté for 2 minutes. Add remaining ingredients and cook for an additional 2 minutes or until the tomatoes are tender. To make mushrooms: Season mushrooms with salt & pepper and balsamic vinegar. Place mushrooms(cap up/veil down)on a clean, hot section of broiler or grill pan and cook for 1.5 minutes. Flip, season and cook for an additional 1.5 minutes.(Just make sure they are cooked but not rubbery) Transfer to a paper-toweled plate in a single layer and set aside. Time to put it together! Take Ciabatta or Panini Rolls and cut in half. On first slice of bread Spread Tuscan Italian Dressing Place one slice of Swiss cheese Add Tomato and Onion Mix Place Mushroom, veil down, over mix Place another slice of Swiss on top of that Take last slice of bread and spread Tuscan Italian dressing. Place on top of sandwich to complete the building process Heat saute pan over medium heat. Brush Sandwich with a little bit of oil (garlic oil if your trader joes still has it) and place on pan, flip and repeat so that both sides have been brushed with oil. Continue to flip and press down with spatula until golden brown (do not burn!) Remove from pan (when finished) and cut diagonally. Serve with Trader Joe’s Roasted Red Pepper Tomato Soup! Then Enjoy! I know it sounds like a lot of work but it really isn’t and SOOOOOOOOOOO worth it! You will thank me later I promise! A glass of red wine helps wash it down ever so nicely, Black Mountain Fat Cat is always a good choice!
