One Dish Gnocchi

2 boneless/skinless chicken breasts, cut into bite size chunks 1 medium red onion 3 cloves garlic olive oil 1 package Gnocchi 1 package small sweet peppers (red, yellow, orange) 1 jar pitted kalamata olives 1 jar sun dried tomatoes 1 package cut broccoli or 1 bunch asparagus chopped (your preference) 1 cup red or green pesto 1 cup grated Parmesan cheese Coarse ground black pepper Saute olive oil, onion and garlic in large fry pan. Chop sweet peppers and add to mixture, cook until almost tender. Add chicken pieces, while chicken is cooking start boiling water in large pot for gnocchi. When chicken is almost done, add sundried tomatoes and kalmata olives and broccoli or asparagus, cook until al dente. Add gnocchi to boiling water, cook as directed. Drain gnocchi and add to chicken mixture. Add pesto and stir until mixed. Add parmesan and black pepper to taste…stir and it’s ready to eat!
