Multi-Vegetable Chili

2 tbsp olive oil 1 onion chopped 3 cloves garlic chopped 2 tbsp cumin 1 tbsp coriander 1 tsp cinnamon 1 tsp chili powder salt/pepper to taste 1 tbsp brown sugar 2 tbsp tomato paste 1 1/2 cup veggie broth (add more if necessary) 1 13 oz can diced tomatoes 1 13 oz can kidney beans (rinsed) 1 30 oz can black beans (rinsed) 1 cup shredded carrots 1 8 oz package chopped mushrooms 5 small baby potatoes chopped spinach (to spoon chili over) cheese or avocado (optional) Directions: Saute onion, and garlic with olive oil Add all ingredients except for spinach and optional items Simmer for 45 minutes Serve and enjoy!
