Feta Chicken Spinach Casserole

1 package frozen spinach, thawed and drained by placing the spinach in a clean kitchen towel and squeezing out the moisture 1 egg 1 cup TJ’s Crumbled Feta Cheese (regular or reduced calorie), divided in half 1 package TJ’s Just Chicken 2 cloves garlic, minced 1/2 tablespoon oregano 20 TJ’s Kalamata olives, drained and chopped (you can use more if you like) 1 cup TJ’s canned tomatoes, pureed Preheat oven to 350°. Grease the inside of a 9 x 9 baking dish with a little bit of oil. Put the spinach, egg and 1/2 cup of the feta cheese in a small bowl. Mix until all ingredients are evenly blended. Spread the mixture in the bottom of the baking dish. Spread the chicken pieces evenly over the spinach mixture. Sprinkle the chicken with the minced garlic and oregano. Spoon the pureed tomatoes over the chicken, then sprinkle with the remaining feta cheese and the chopped kalamata olives. Place in the oven and bake until heated through and bubbly. (The feta cheese will not look melted, just a little softer)
