Eggplant Parmesan With Veggies

Trader Joes frozen Breaded Eggplant Cutlets 1 jar Tomato Sauce (your choice) 1c. grated mozzerella cheese 1/2c. grated parmesean cheese 1 bag crimini mushrooms (sliced) 1 zuchinni chopped 1 onion diced olive oil garlic (can use the frozen cubes) Trader’s pasta seasoning (or other italian seasonings) salt & pepper to taste spaghetti Saute the garlic, onion, zuchinni, and mushrooms in the olive oil for ~ 8 minutes. season to taste. Layer in a 8 x 8 dish, tomato sauce, eggplant, cheese, veggie mixture. Finally top with cheeses. Bake @ 350 until bubbly (about 30 minutes). Serve with spaghetti.
