Creamy Mish-Mashed Corn Potato Soup

To purchase at Trader Joe’s: Roasted corn and (Poblano) pepper soup in tetra pack (1 box) Fresh Spinach (2-3 handfuls) Red Potatoes (4-6 small/med) Frozen Garlic (2 cubes) Butter (2-3 TBSP) Organic Cream (1/2 cup – one cup or so – depends on how much you are willing to look past the fat content) 🙂 Ground Flax Seeds (a couple TBSP) Salt (to taste) (Frozen basil – 2 cubes optional) *Boil potatoes covered (will take about an hour or so) *Once a fork can go through them easily, pour off water and mash the potatoes with a fork, potato masher, or beaters (It doesn’t matter which) *Add one or two frozen garlic cubes *Mix in cream and butter and a little salt (to texture and taste preference), *Add ground flax (to add texture and fiber) *Mash together until flavors are blended throughout *Set “Mish-Mashed” potatoes aside (to let the flavors blend/set) *Once the mish-mashed potatoes are done, Start the tetra pack of corn/pepper soup *Add a couple handfuls of fresh spinach. *Let heat covered on med or lower (not to boil, just to simmer) until the spinach is cooked down. *For a serving, put some mashed potatoes in a bowl and cover with corn/pepper/spinach soup. *Stir together to make a creamy potato/corn/pepper/spinach soup. The flavors are out of this world! Very soothing and comforting while also being filling and YUMMY!! (Can add frozen basil to “Mish-Mashed” potatoes when you add the frozen garlic for more flavor)
