Cream Cheesy Pumpkin Glazed Cornish Hen W/ Potato Bread and Pecan Stuffing

Cornish Game Hen Stuffing 4 Slices Potato Bread Cubed per hen 1/8 cup oil per hen 1/8 cup chopped pecans per hen Glaze 1/2 Cup Trader Joe’s Jar Pumpkin Butter per hen 4oz whipped cream cheese per hen 1/8 cup Trader Joe’s 100% Canola Oil per hen Preheat oven to 400º. Clean hen and remove innards. Stuffing: Using the oil, saute the bread and pecans over medium heat. Stuff the hen with the mixture. Glaze Blend The pumpkin butter and cream cheese with electric mixer until smooth. Brush oil over hen. Rub hen with the pumpkin butter mixture until well coated. Wrap a small piece of aluminum foil over the ends of the drumsticks on each hen. Place in a shallow roasting pan. Roast in a preheated oven at 400º for about 40 to 45 minutes, basting with broth halfway through. ****The bread and ratio can be altered to suit, but this is how I prepared this dish **** This was a quick meal as I had extra pumpkin butter spread left over from a fellowship (seeing as nobody knew what it was, the spread was left untouched. Not wanting to waste the spread, I wrapped it up. I had purchased the cornish game hen figuring it would be a quick and easy meal for a single person. Lacking something else to season the hen with, I decided to give the pumpkin spread a go. I added the oil to decrease the sweetness a bit. I said to myself that it was an experiment that I am not sure would go well. I’m a very picky eater. To my happy surprise, the hen came out wonderful. Something I will definitely try again. Something I would attempt for a dinner party even! My cat (who always insists on sharing my chicken) even loved it! Ingredients can be altered to suit your taste.
