Cranberry Pear Cobbler

Preheat Oven to 350 degrees. 13×9 baking dish. 2 Jars of TJ’s pear halves in white grape juice (reserve juice) sliced. 1 cup reserved juice 1 bag of fresh TJ’s cranberries 1/2 cup TJ’s organic cane sugar 1/2 cup TJ’s organic brown sugar 1 tsp of cinnamon topping: (i like a lot of topping, you could halve this if you like it a little less heavy) 1 1/2 cups all purpose flour 1 1/2 cups oats 2/3 cups packed brown sugar 1 tsp cinnamon 12 TBS melted butter (stick and a half) bring juice and sugars to a boil to dissolve, reduce to simmer. add cranberries and simmer until cranberries pop and sugar starts to thicken (10 mins or so). stir in sliced cranberries and pour mixture into baking dish. mix topping ingredients in bowl and sprinkle over cobbler. Bake 20mins or until topping is browned. I find this is best when made ahead of time and allowed to cool, then heated before serving, it allows the fruit to gel and firm up. great with fresh whipped cream or vanilla ice cream. enjoy!
