Black bean Corn and Cous Cous Salad

Dressing: 5 Tbsp lime juice 2 1/2 Tbsp vegetable oil 1 1/4 tsp Trader Joe’s cumin 1/2 tsp salt 1/2 tsp pepper 1 tsp Trader Joe’s minced garlic Salad: 2 cups cooked & cooled Trader Joe’s Cous Cous 2 cups frozen Trader Joe’s corn kernels, defrosted 1 can Trader Joe’s black beans, rinsed 4 roma tomatoes, seeded & diced 1/2 red onion, diced 1 avocado, pitted, peeled & diced In a small bowl, whisk together all ingredients for dressing. In a large bowl stir together all ingredients for salad except the avocado. Pour in the dressing and mix well. Refrigerate for at least 1 hour. Mix in avocado right before serving.
