Cream of Pumpkin

An American Classic which is always popular : With trader Joe’s organic canned pumpkin you don’t depend anymore on fresh pumpkin. Can be served hot, cold or at room temperature . As an Appetizer or as a main course for a light meal. Ingredients for 6 servings: 2 16 oz cans trader joe’s organic pumpkin 2 oz butter 1 onion, sliced thinly 1 garlic clove, crushed 1 1/2 pts vegetable broth 1/2 tsp trader joe’s pumpkin spice 1 tsp lemon juice 3 thin strips orange peel 1 bay leaf 1/2 pt milk salt and pepper to taste GARNISH: 6 Tbsp sour cream or double cream or yogurt or fromage frais snipped fresh chives Directions: Melt butter in a large sauce pan,add onions and garlic and fry slowly until soft.Add trader Joe’s pumpkin, vegetable broth and bring to a boil.Add trader joes pumpkin spice,lemon juice, orange peel and bay leaf. Cover and simmer gently 20 minutes. Discard orange peel and bay leaf. Cool the soup a little and process in a food processor or blender until smooth. Pour the soup into a clean sauce pan , add the milk and reheat gently. Adjust seasoning to taste.Garnish with a swirl of cream, yogurt or fromage frais and snipped chives. Can be served hot or cold in chilled cups or at room temperature.
