Pumpkin Spiced Pork Tenderloin with Pumpkin Maple Sauce

Four teaspoons TRADER JOES pumpkin spice Two teaspoon sea salt Two teaspoons fresh cracked pepper One tablespoon olive oil Two pork tenderloins (about pound to pound and a half each) One half cup TRADER JOES pumpkin butter One half cup maple syrup One quarter teaspoon crushed red chile pepper One quarter cup toasted pumpkin seeds, optional Five to ten sprigs Italian parsley leaves, optional Preheat oven to 450 degrees and place oven rack in the middle position. In a small bowl mix together the pumpkin spice, salt and pepper. Thoroughly rub the oil into the tenderloins. Evenly sprinkle the spice mixture onto tenderloin and rub into tenderloins. Put on a half sheet pan and place into oven and bake for roast meat twenty five minutes. While the tenderloins are cooking place the pumpkin butter, maple syrup and crushed red pepper into a small sauce pan. Gently melt the pumpkin butter into the syrup over medium/low heat, stirring occasionally. When tenderloins are done remove from oven and pour half the sauce evenly over the top. Let tenderloins rest for five minutes. Cut into half inch to one inch slices across the grain and place onto a platter and garnish with pumpkin seeds and Italian parsley leave as desired. Place the remaining sauce into a small serving dish and allow your guest use as they desire. Enjoy. Cooking note: All the above ingredients can be found at your local friendly Trader Joes store.
