This yummy organic vegetable blend is comprised of soybeans, corn and red peppers. The soybeans replace the lima beans that are traditionally found in succotash, leading to the clever word-play of “soy”cutash. Cute name, but more importantly, a delicious and healthy staple in my freezer. My simple serving suggestion is to cook it with a little kosher salt till tender, and serve over a bed of brown rice. It’s a filling and satisfying quick vegetarian meal, and leftovers are great for lunch the next day.
