Pizza Mascarpone

I’d never tried Trader Joe’s pizzas before, so I wasn’t sure what to expect. Since Artichokes, Mushrooms and Sundried Tomatoes (the toppings) are some of my favorite foods I knew I’d be trying this flavor first. When you take it out of the box, it looks like the toppings are distributed haphazardly and unevenly, and I was worried there was too much marscarpone, which can have a really overwhelmingly rich taste. Well, it turns out, fear not! It was absolutely delicious and perfect. It’s a wonderful blend of toppings, with just the right amounts, and the sun dried tomatoes are huge (and in actuality, look more like oven-roasted tomatoes) and delicious! Even the marinade on the artichokes has a wonderful, fresh, restaurant-like taste. There’s also mozzarella and grana cheese on there but it’s still crispy and light, and not overly cheesy. It’s 15g of fat and 340 calories for 1/3 of the pizza, but I think most people would eat at least one half of it. So worth every calorie though!
