Pizza Formaggio Di Capra (Handmade Goat Cheese Pizza)

This is my favorite of all of Trader Joe’s large thin crust pizzas. All of them cook in about 7 minutes—the worst part is waiting for the oven to warm up. This is not entirely goat cheese–the goat cheese are the white discs. Emmenthal (swiss) cheese coats the rest of the pizza. Once baked, you can spread the goat cheese to blend, or just leave the discs as they are. I never saw the point of the olives on there—they are not necessary, and if you slice into 8 pieces, only half get an olive! I would say it serves two adequately, or one hungry guy. I wouldn’t dream of microwaving this, although the directions say you can.
