Potato and Green Chile Burrito

I hate to sound like Rachel Ray, but “Yummo!” The burrito is very filling and comes fresh (not frozen) in the cheese/meat section of the store. So, if you buy one, you’ll need to eat it within a few days (or freeze it). It’s wrapped in a yellow salsa & tomato tortilla and is filled with tons of thick mashed potatos, spicy green chile, corn and lots of jack cheese. It’s got 7g of saturated fat, so this probably isn’t good for those on a diet. But, I’m a skinny guy who can’t gain weight, so this is ideal for me. I grew up in New Mexico and Hatch green chiles were always on the table. As a born and bred Mexican-American, I give this burrito a big thumbs up.
